O-Higashi
The term O-Higashi refers to a type of dry handmade confectionery usually taken with Japanese Green Tea. It is made in a traditional method from
wasanbon a type of Japanese refined sugar and flavoured and coloured using natural ingredients. It is often used during the Japanese tea ceremony where its
visual aesthetics which reflect the four seasons are very important. It is part of the range of traditional Japanese confectionery (O-Kashi) which is usually
taken with tea and is known as Wagashi. Wagashi in general may include moist ingredients made from fruit and various bean pastes, but does not use cream or
butter which are not part of the traditional confectionery heritage in Japan.
